Makes 4 servings
You will need
1 ¼ cups of white rum
¼ cup plus 2 tablespoons of freshly squeezed lime juice
2 cups of chilled apricot nectar
6 tablespoons of sugar
2 tablespoons of freshly grated lime zest
1. In a food processor pulse the sugar and lime zest until finely
ground. When finished take ¼ cup of the mixture and place in a
shallow dish. Reserve the rest of the mixture. In another shallow dish
pour 2 tablespoons of lime juice.
2. Dip the rims of four cocktail glasses into the lime juice and then
into the sugar mixture, coating well and set aside.
3. In a blender puree the rum, apricot and remaining ¼ cup of lime
juice, ¼ cup of zest mixture that was reserved and 2 cups of ice.
4. Divide into the 4 glasses prepared and serve.
