Makes 40 truffles
You will need:
1 cup of heavy cream
1 lb of semi-sweet chocolate finely chopped
1/4 cup of cocoa powder
1. In a sauce pan bring heavy cream to a boil. In a mixing bowl, place
chopped chocolate and pour the heavy cream over it. Let it sit for about
30 seconds then whisk until smooth.
2. Place in refrigerator for 30 minutes.
3. Remove from refrigerator and beat in a mixer until thick and fluffy.
4. Spoon out small amounts at a time and roll into balls. Dip into cocoa
powder placing on a serving platter when done.
