Makes 2 servings
You will need:
1 cup sweetened shredded coconut
¼ cup of orange liqueur
¾ cup of cream of coconut
½ cup plus 2 tablespoons of tequila
½ teaspoon of salt
½ cup of freshly squeezed lime juice plus 2 tablespoons
1. Preheat the oven to 350.
2. On a baking sheet spread the coconut and salt. Toast in the oven.
Toss frequently until golden brown. Remove from the oven and let it
cool. When cool enough crush with your hands.
3. In a shallow dish pour 2 tablespoons of lime. In another shallow
dish place the coconut mixture. Dip the rim of 2 cocktail glasses in the
lime juice then in the coconut mixture and set aside.
4. Combine all the ingredients that remain in a blender and set to
puree. When mixture is smooth divide into the 2 cocktail glasses that
were set aside.
