Makes 8 servings
You will need:
2 cups of champagne (may be substituted for sparkling wine)
1/3 cup of campari
8 whole star anise
1 cup of sugar
6 cups of ruby red grapefruit juice, chilled
1 cup of water
1.In a small sauce pan combine 1 cup of water, sugar and star anise. Stir
occasionally until sugar dissolves. Bring to a boil.
2.Remove from heat and let it cool completely. When cool pour mixture into
a measuring cup using a sieve. Discard star anise.
3.Cover mixture with plastic wrap and chill.
4.In a large pitcher combine campari, grapefruit juice and chilled mixture.
Divide into eight glasses and top with champagne or sparkling wine and
serve immediately.
