Makes 2 servings
You will need:
½ cup of melon liqueur
1 cup of seltzer water
½ large honeydew melon
1. Scrape out and discard seeds of the melon with a large spoon. Using a
melon baller, about ¾ inch, scoop out 10 melon balls and place in a plastic
container. Set the rest of the honeydew melon aside. Pour the melon
liqueur over the 10 melon balls and seal container. Place container in the
freezer for 1 hour.
2. Place remaining honeydew in the blender and puree until smooth. Let it
stand until juice settles to the bottom of the blender and the foam rises to
the top. Measure out ½ cup of juice without the foam.
3. Remove melon balls from the freezer and stir in juice and seltzer.
4. Divide mixture with melon balls into 2 cocktail glasses and serve.
